Vegan Chocolate Chip Cookies


Are you looking for a ridiculously easy chocolate chip cookie recipe? Then you are in the right place. This recipe makes use of very basic ingredients and it can be modified to make it gluten free and refined sugar free. The best part? It's completely VEGAN and utterly delicious!


This recipe makes about 6-7 cookies, depending on how big or small you shape them. If you're looking to make a bigger batch of at least 12-14 cookies, then feel free to double this recipe!


Please also note that I made these cookies using basic flours and sugars - nothing fancy! Seeing as I have never had a gluten intolerance or felt the need to cut out refined sugars, I had no problem using basic "unhealthy" ingredients. If, however, you are someone who prefers healthier or gluten free desserts, then you can also modify this recipe to have it comply with your unique dietary preferences or requirements.


INGREDIENTS

- 3/4 cup all-purpose flour (replace with gluten free flour like almond flour, oat flour or buckwheat flour)

- 1/2 tsp baking powder

- 1/8 tsp baking soda

- 1/2 tsp salt

- 1/2 cup brown sugar (replace with coconut sugar to make it refined sugar free)

- 2.5 tbsp coconut oil

- 4 tbsp non-dairy milk

- 1 cup dark chocolate chips (even 1/2 cup will work)

- Optional: flaky sea salt/pink Himalayan salt to sprinkle on top


DIRECTIONS

- Preheat your oven to 350F/180C

- Grease a baking tray with non-stick cooking spray and set aside

- Mix flour, baking powder, baking soda and salt in a bowl

- Add your sugar, oil, and milk and mix again

- Fold in the chocolate chips

- Use a cookie dough scoop to place the balls on the baking tray. I just used my hands to roll little balls and then pressed them down slightly with my fingers

- Sprinkle a little bit of flaky sea salt or course Himalayan salt on top

- Bake for 10-12 minutes
